Bran, Flax & Raisin muffin

I can feel spring coming. The weather is getting better no more of this and that ! 
So I am sharing another muffin recipe with you. Another bran muffin recipe. It's as if I am rediscovering the simple & delicious taste of bran in muffins. Oh and raisins in there...are just amazing. 

Ingredients: 
2 cups whole-wheat pastry flour
1 1/4 tablespoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon salt
1 1/2 cups oat bran
1 cup almond milk
1/2 cup flaxseed egg substitute (blend 1/2 cup ground flaxseeds and 1 1/2 cups water on high speed in blender until thick and frothy, set for 1 hour in fridge, will make a little more than 1/2 cup)
1/2 cup olive oil
1/2 cup maple syrup
1 cups raisins

1/2 cup of walnuts (or more raisins)

Preheat your oven at 350F
When you flaxseed egg is ready add the maple syrup, milk & olive oil. 
In another bowl, mix the bran, raisins, walnuts, baking soda, baking powder, flour, cinnamon & salt. 
Then add the wet ingredients to the dry and stir (not to much you want fluffy muffins don't you?) 
Place the mixture in you muffin pan, if you are using paper ones add some coconut oil or some vegan butter to make sure they will not stick.
