Ingredients:
2 cups of vegan yogurt
2 teaspoons of baking soda
3/4 cup of honey (or agave)
2 flax ''eggs'' (2 tablespoon of ground flax mixed with 6 tablespoons of water, let it rest 3-5 minutes)
2/3 cup of canola oil
2 cups of oat bran
2 cups of all purposed flour
4 teaspoons of baking powder
1 1/2 cup of blueberries
preheat oven at 350F
In a large bowl, Mix the yogurt, honey, flax eggs & oil together.
In a second bowl stir the baking soda, flour, baking powder, bran and blueberries together.
Then add the liquid ingredients to the dry ones and mix together.
Place the mixture in you muffin pan, if you are using paper ones add some coconut oil or some vegan butter to make sure they will not stick.
Cook for about 30 minutes.

These sound amazing. I have somehow never put bran in a muffin. But it is blatantly obvious that I don't know how it has slipped past me for so long. Also that is the cutest tea cup!

ReplyDeleteThis sounds like a LOT of soy yogurt, though, no? Does it make the muffins any lighter/fluffier/more moist?
I know! I felt the same when I saw the recipe at first! I took this recipe from my boyfriend's mother. I asked her and she claimed it was the right quantity and it really is. But notice that there is no milk in there...If you don't feel like using only soy yogurt try putting half soy yogurt and half almond yogurt ! But really the yogurt adds nice light/fluffy taste indeed !
