Portobello & Pomegranate over quinoa

Hi everyone, I hope you are all having a wonderful friday. 
This is a nice and quick recipe that I like to prepare for the upcoming week. I like it's sweet & salty taste. I bring it as a lunch to school or I serve it for dinner. I know the portobello and pomegranate mix sounds weird but believe me it is a delicious combo.
Ingredients: 
3 portobellos cut in small pieces
1 white onion
1/2 cup of pomegranate 
1 cup of cooked lentils 
1/3 cup of fresh leek cup into small pieces 
4 tablespoons of teriyaki sauce 
1/2 tablespoon of soy sauce 
1 tablespoon of olive oil
pinch of salt
pinch of pepper 

1 cup of cooked quinoa

Directions:
preheat your oven at 350F
Mix everything together in a large bowl. 
Cook all the ingredients together except the quinoa for 25 minutes.
Serve on quinoa (or rice) add some fresh pomegranate on top, fresh sprouts and herbs if desired. 

Ingrédients :
3 portobello coupés en petits dés 
1 onion blanc coupés en petits dés 
1/2 tasse de grenades 
1 tasses de lentils pré-cuites 
1/3 tasse de poireaux coupés en petites rondelles
4 c. à soupe de sauce teriyaki  
1/2 c. à soupe de sauce soya 
une pincée de sel
une pincée de poivre 

1 tasse de quinoa pré-cuit 

Directions:
Préchauffez votre four à 350F
Mélangez tous les ingrédients dans un grand bol. Placez le mélange dans un grand plat(de style pyrex) Laisser ensuite le tout cuire pour une période de 25 minutes. 
Servir le tout sur un nid de quinoa. Ajouter des herbes fraîches, de la grenade et des pousses au goût.

    Caps lock are required, I'm seriously so excited about this recipe. I've been meaning to make a simple lunch recipe including pomegranate seeds for a while now and this is just what I needed. I wouldn't have thought of combining them with mushrooms, you've honestly just put together all my favourite ingredients in the world (except maybe for chocolate, haha!).

    1. The teriyaki add a nice flavor to the whole recipe. Mushrooms with teriyaki are so delicious!
