Coconut & cocoa macaroons

This is a quick simple coconut-cocoa mini-treat recipe. It takes a little amount of time to get a delicious treat that can be kept in the freezer (*if you can hide some from the rest of your family.. or else they don't stay quite long...)
The coffee latté picture is to remind you how delicious it is to have coffee and desert together. In case you had forgot. (is this even possible to forget?)
These coconut bites match just perfectly with the taste of coffee. (I tried it more than once, just to make sure...) There are many variations to this recipe; You can eat the dough raw by forming the dough into nice little ball. I love to cook it a little in the oven at a very low temperature. It gives them a nice little crispy taste and also makes your home smell delicious for a while..
I took this recipe on The sprouted kitchen. An amazing online recipe ressource. Their cookbook is also filled with delicious recipes. A must have!
You will need:
1 1/2 cup of unsweetened shredded coconut           1 1/2 tasse de noix de coco non-sucrée (râpée)
1/2 cup of cocoa powder                                         1/2 tasse de poudre de cacao
1/3 cup of rolled oats                                              1/3 tasse d'avoine
1/2 cup of maple syrup                                           1/2 tasse de sirop d'érable
1/4 cup of coconut oil                                             1/4 tasse d'huile de coconut
1/2 tsp on vanilla extract                                        1/2 c. à thé d'extrait de vanille
pinch of cinnamon                                                  une pincée de cannelle
Directions:
In a big bowl combine the cocoa powder, coconut and rolled oats. Then stir in the coconut oil (melted), maple syrup, vanilla and cinnamon. Then when everything is mixed together evenly set in the fridge for 20 minutes.
Preheat oven to 210F
Using a mini scooper or with your hands make little balls and set them on a parchment paper. Bake them for 20 minutes. Remove to cool.
Directions:
