Banana & almond butter muffins


I hope you are all having amazing christmas vacations. It is such a nice time to relax and spend time with friends and family. I just wanted to take the time to wish you all an amazing new year, filled with new adventures and love.
I will be gone for the next week to Vancouver, I am very excited to celebrate the new year there with my boyfriend, his mommy and his brother. If you've ever been there feel free to tell me any nice experience you had with any activity or restaurant. I would love to know your favorite places in 
Vancouver. 
 Now lets get into serious muffin stuff, like this delicious banana almond butter muffin recipe... They are delicious, I love to have them with a nice Café latte or a big cup of tea. 
Ingredients: 
1 cup of all purposed flour
1/3 cup of pecans 
3/4 cup of oats 
1/2 tablespoon of baking powder
1/2 teaspoon of baking soda 
pinch of salt
1 cup of mashed bananas 
1/4 cup of coconut sugar (or brown sugar)
1/2 cup of almond butter 
1/2 cup of almond milk 
1 flax egg (1 tablespoon of ground flax mixed with 3 tablespoons of water, let it rest 3-5 minutes)
Directions:
Preheat oven at 350F 
Mix flour, pecans, oats, baking powder & soda, salt, sugar together. Set aside
In another large bowl stir, bananas, almond butter, milk and flax egg. 
Then add the liquid ingredients to the dry ones and stir well. 
Place the mixture in you muffin pan, I use silicone muffin cups, if you are using paper ones add some coconut oil or some vegan butter to make sure they will not stick. 
Cook for about 30 minutes.

1 tasse de farine tout-usage
1/3 tasse de pacanes 
3/4 tasse d'avoine
1/2 c. à soupe de poudre à pâte
1/2 c. à thé de soda 
une pincée de sel 
1 tasse de bananes (écrasées)
1/4 tasse de sucre de coconut (ou sucre brun)
1/2 tasse de beurre d'amandes 
1/2 tasse de lait d'amande (ou autre lait)
1 faux oeuf de lin ( 1c. à soupe de graines de lin moulue dilué dans 3 c. à soupe d'eau. Laissez le tout trempé 5 minutes. Ceci remplace très bien un oeuf dans une recette comme celle-ci.) 

Directions:
Préchauffez votre four à 350F
Mélanger la farine, les pacanes, l'avoine, la poudre à pâte, le soda à pâte, le sel et le sucre ensemble. Ensuite dans un bol différent mélangez les bananes avec le lait, le beurre d'amandes et le faux oeuf de lin. Ensuite, ajouter le mélange liquide au mélange sec et mélanger. Placez ensuite le mélange dans des petits moules à muffin (j'aime bien utiliser ceux en silicone comme ça pas besoin de les graisser et on peu les réutiliser.) Ensuite, placez vos muffin au four pour 30 minute (environs) le temps peu varier d'un four à l'autre. 
Dégustez avec du yogourt, un bon verre de lait, un bon latté ou un bon thé!
