Molasses muffin tops

I remember when my mom would suddenly decide to make her molasses muffin tops. It was the time when she would still make our school lunches. My mom was always so excited and happy to make them, she would fill them with amazing meals and snacks. She would also leave a little note and even little cards on special occasions. She made my lunch up until I left my native city for my university degree. I know this sounds silly and I was old enough to do my lunch but you could not take away the whole lunch thing from my mom.
She loved it.
So here is a modified recipe of my mom's delicious cookies
Ingredients:
1 cup of rolled oats
1/2 teaspoon of baking soda
1/2 teaspoon of baking powder
1/4 teaspoon of salt
1/2 teaspoon of cinnamon
1 cup of all-purposed whole wheat flour
1/4 teaspoon of ginger
pinch of all-spice
2 bananas mashed
3 tbs of molasses
1/3 cup of coconut sugar
1 flax egg (1 tablespoon of ground flax seed mixed with 3 tablespoons of water)
1/3 cup of almond milk

Directions:
Mix dry ingredients together (oats, baking powder, soda, salt, cinnamon, flour, ginger, all spice and sugar)
At 3 tablespoons of water to your ground flax seeds and let it rest for 5 minutes
add almond milk, mashed bananas.
Add the liquid ingredients to the dry one and stir well
Bake for 10-15 minutes and Enjoy :)
