Honey Thumbprint cookies


It's been a while! 
I am back with a delicious cookie recipe. You can't be mad or sad when someone shows up with thumbprint cookies. Can you? Especially when the jam in the middle is damn delicious.
I hope you guys are all having a lovely spring filled with new flowers and fresh new gardens. I've been working on my little coffee shop, I will keep you posted with this new project of mine. I missed blogging a lot so I'll be posting a few recipes every week.
2/3 cup honey 
1/3 cup warm coconut oil 
1 1/2 teaspoon vanilla extract
1 1/2 cups whole wheat pastry flour
3/4 cup rolled oats
scant 1/2 teaspoon fine grain sea salt
1/4 teaspoon baking soda
zest of one lemon
your favorite jam or preserves 



Preheat the oven to 350F Line two baking sheets with parchment paper.
In a large mixing bowl pour the warm, melted coconut oil over the honey and whisk in the vanilla extract. In another medium bowl combine the flour, oats,sea salt, baking soda, and lemon zest. Add the flour mixture to the honey and stir until just combined. 
Roll the dough into balls, Use a finger or the back of a very tiny spoon to make a well in the top of each ball of dough. Fill each "well" to the top with jam. 
Bake for seven to ten minutes or until the bottom and edges of the cookies are just golden.

Break

I did not post anything in a while because of several important changes that are arising in my life. I wanted to let you know that I won't be posting for a while. 
I am working on a project with a friend and I am very excited to explain it to you. My friend has a wonderful yoga studio and we are working on having a vegan coffee shop that will include smoothies, juices, coffee and vegan snacks. It will be a nice place to sit and talk after yoga class. So I've been working on this for a while and I will keep you guys posted with all this.

Blueberry scones

I love baking. I love the smell it brings to my apartment. Baking brings a total chaos in my kitchen and then when the cleaning is done it's as if nothing had happend, but secretly in my oven the evidence of the chaos it there. 
Blueberry scones; 
Makes 8 

2 cups of flour 
2 tablespoons of baking powder 
1/4 teaspoon salt 
6 tablespoon of coconut oil 
1/3 cup of coconut sugar
1 cup of blueberries 
1 flax egg (1 tablespoon of ground flax mixed with 3 tablespoons of water, let it rest 3-5 minutes)
1/2 cup of milk mixed with 1 tablespoon of apple cider vinegar 

1. preheat your oven to 400F. Sift together the flour, baking powder and salt into a large bowl and stir in the coconut oil (not melted). Rub the coconut oil into the flour until the mixture is like fine bread crumbs. Stir in the sugar and blueberries. 
2. Beat together the flax egg and the milk and pour into the large bowl. Mix to a soft dough. Turn out the dough onto a floured surface and knead gently. 
3. Shape and gently pat the dough into a 7 inch circle. With a sharp knife to cut into eight even wedges. Place them on a baking sheet and bake for 20-22 minutes. 
Add some sea salt on them or sugar if desired (I added some ''fleur de sel'' and it was delicious!)

Kombucha berry & oat smoothie

Spring is almost here, and its time to blend up your mornings! This smoothie is so good. You have a nice little taste of kombucha mixed with berries. 
For those of you who don't know what the hell is this ''kombucha'' thing here is a link to help you figure this out...Kombucha 101 you can also check this out Kombucha crudessence . Anyone who has digestion problems should know about the existence of kombucha or any other raw fermented product.  
  • 1 1/2 cups of berries 
  • 2/3 cup of kombucha 
  • 1/3 cup of almond milk 
  • 3 tbsp of almond yogurt 
  • 1 tbsp of almond butter
  • 2 tablespoons of oats 
  • 1 tablespoon of maple syrup or agave  
  • throw everything in your blender. If it seems a little thick, just add in a bit more milk.

black bean brownie

Okay so... I had never tried any dessert with beans before. The black beans in a brownie made me freak out a little. But sometimes you just have to give it a try. Being scared of something does not get you to do anything
So I tried a black bean brownie recipe, I found it on My Little Celebration. (click on the link to get her recipe). It ended up being totally delicious! I had a lot of fun not telling about the whole bean thing to my boyfriend. When he arrived home I simply told him I had made some brownies.  I also told him he had to guess a secret ingredient. Turns out he never found out what it was, so I decided to tell him. He still had a second serving ;) 
 So black bean brownies are totally delicious, for all of you who were not sure about the whole bean dessert thing.
